A gastronomic white wine with beautiful layers. The Chardonnay enjoyed an extended period sur lie, underwent malolactic conversion, and was partially aged in French oak (50% for 7 months) to ensure the necessary roundness and complexity. The Auxerrois was aged in stainless steel and provides the necessary elegance and fruitiness in this wine. During vinification, intervention is kept to a minimum. There is no deacidification or acidification. Clarification is achieved primarily by gravity and racking, followed by (light) filtration. No fining agents are added.
